PROGRESS REPORT II: BOURBON

Progress Report II is a Straight Bourbon approximately half way through the 5 year maturation of Awildan’s eventual flagship Bourbon. While other barrels continue to age, we offer this snapshot on the progress of our first batches. This whiskey is double distilled in our traditional copper pot stills. The mash bill is 51% corn, 39% malted barley, and 10% oak smoked malted wheat. The virgin oak barrels were toasted then charred to #3. The toasting process delivers more barrel complexity to this young Bourbon, which is already rich in vanilla and spun sugar sweetness, and deeper toffee flavors.
